Beets…in chocolate cake. Really?

Really really.

We’ve been super busy over here at MyReci after a great week of initial testing.  We received some fantastic feedback and are already making changes to the site based on what we’ve heard.  In another week or so, we’ll be releasing more invites for all you to join in on the fun.  Thanks for being patient as we make this thing the best it can be.

It might be a gloomy day here in Boston, but this amazing recipe video from creative studio Tiger in a Jar should do the trick to perk things up (Thanks to The Kitchn for the tip!).  With fall upon us, beet season is in full swing but we’ve never heard of using them in cake, with chocolate of all things!  Adding this to the to-cook list.  Until then, check out the video and some of our favorite beet recipes.

    My mom and I were cooking up beets the other night (fresh from the farmer’s market), and after steaming/sauteing them, we were inspired to mix about 1T of blue cheese onto the cubes. OMG. So simple, and yet, possibly the best beets I have ever tasted.

    So again we…
    1.) Peeled and diced the beets.
    2.) In a fry pan, cover the beets with water and a chunk of butter (you decide how much).
    3.) Boil away the water while the beets are tenderizing… it’s fine if they “saute” toward the end.
    4.) Add some blue cheese (you don’t need much), a little sprinkle of fresh, minced parsley, and salt & pepper to taste.

    So simple. So good.

    Awesome – it sounds great! I would be concerned that blue cheese would overpower the beets but I guess with the right cheese and not too much of it, it would be awesome.
